1Allow steaks to come steaks to room temperature.
2Preheat a 10 to 12-inch cast iron skillet on high heat.
3Preheat an oven to 350-400 degrees.
4Combine Brown Sugar, Kosher Salt, Pepper, and dried herbs.
5Coat steak lightly with oil and season both sides with rub from above.
6Sear steaks fro about 30 seconds to 1 minute until very golden brown. Turn over with tongs and put the pan straight into the oven. For a medium rare, cook for 6 minutes or until internal temperature of 125 degrees. Remove steak from pan, cover loosely with foil, and rest for 5 minutes. Serve whole or slice thin and fan onto plate.
