Marinade
1Mix all of the marinade ingredients together in a small bowl and reserve.
2In a large bowl, combine all marinade ingredients and add chicken. Let stand for 30 minutes.
Finish the Dish
1Heat pan to high and add oil. Add garlic and cook until light brown. Add noodles to pan and cook until tender, about 2 minutes until tender.
2Add ginger, Bok Choy and mushrooms, and let cook for about 30 seconds. Add the chicken with marinade and cook for about two minutes or until chicken in medium while continually stirring. Add sauce mixture, let come to a boil for a bout 1 to 2 minutes. It should thicken up to a thick sauce. Add more cornstarch slurry if necessary. Garnish with green onions.
